MONTH 2, RECIPE 2: MRS. BEAN’S FAMOUS NUTMEG GINGER APPLE SNAPS!

Have you seen The Fantastic Mr. Fox yet? If you haven’t, then you won’t think these are as cool as I do! But, it’s an awesome movie so GO GO GO! Once I left the theatre, I immediately NEEDED to figure out a recipe… and I feel like I did a pretty CUSS good job!

1 1/2 c. butter
1 c. light brown sugar
1 c. white sugar
1/2 c. molasses
2 eggs
3 1/2 c. flour
1 tsp. nutmeg
2 tsp. cinnamon
1/8 tsp. clove
1 tsp. salt
4 tsp. baking soda
3 tbs. fresh grated ginger
3 small-medium sized apples (whichever you prefer), cored, skinned and sliced
1 c. raw sugar

Preheat oven to 350 degrees. Place slices of apple on lined sheet and bake for 10 minutes. Remove from sheet, let cool, then chop half of the apples into bite sized pieces. In a separate bowl, cream together butter and sugar. Once smooth, add molasses and eggs. Mix then set aside. In another bowl, mix the dry ingredients. Slowly add to wet mixture and stir until well combined. Add chopped apples and grated ginger. Work into 1 in balls, then roll each in raw sugar until completely covered.

Place a full sheet (about 6 cookies) into the oven for about 5 minutes. Check to make sure they’ve spread a bit, then add two slices of apple on top of each cookie. Bake for another 6-7 minutes until golden brown.

Note for making CUSSIN’ awesome apple snaps: At the risk of sounding lame, these cookies really are fantastic. I can totally see why Mr. Fox and company scarfed them down so hastily! I will say the only problem comes with calling them a snap; they are actually quite soft (which I prefer, anyway). Other than that, these are the cutest cookies this side of the mississippi…

These were Fantastic cookies. I wasn’t to sure how putting an apple on top would taste, but it was Fantastic. I also loved that you put real apples into the recipe instead of pre-dried ones.
