MONTH 2, RECIPE 6: CREPES
Pancake Sunday is easily one of my favorite days of the week. Even still, it needs to be spiced up every once in a while…

Crepes are awesome because they’re kinda like a huge pancake you can STUFF with awesome things! My favorite is the easy butter, cinnamon and sugar but people have gone wild with crepes for years now; even restaurants dedicated to the crepe (there’s an awesome creperie in Brighton, Massachusetts called Cafe Nation which you should go to). So, make them! Stuff them with whatever you’ve got in the house!

2 large eggs
3/4 c. milk
1/2 c. water
1 c. flour
3 tbs. melted butter
1 tsp. vanilla
1 tbs. sugar
Filling of your choice

Mix all ingredients until smooth (should be very, very thin). Heat a buttered large sauce pan to medium-high. Drop about 1/2 cup of mixture in center then spread in pan by picking it up and swooshing (by ’swooshing’ I mean using your wrist to make it spread throughout the pan. I’m sorry). Once the edges just start to curl up and the center is yellow, flip. Cook for another minute or so then remove from pan. Insert fillings, fold and serve!

Note for making the creepiest crepes: Oh, these tasted just like the ones Dad used to make… A bit crispy, a bit chewy and absolutely divine when you top them with a bit of honey. In my opinion, they’re so much easier to make than pancakes, plus less ingredients. Next time I’m DEFINITELY putting some chocolate on mine.. maybe some bananas too!
