MONTH 3, RECIPE 11: CARAMELIZED CHERRIES WITH ORANGE WHIPPED CREAM

GUESS WHAT: I have my fancy pants on! Cherries were on sale the other day, and naturally I had to buy them. I usually do well with sticking to the list I write each week, but come on! When delicious fruits are on sale, you must buy them.

I wasn’t quite sure what to do with them once I got them home so I decided to experiment…

1/2 lb fresh cherries, halved and pitted
Juice and zest from 1/2 large orange
2 tsp almond extract, separated
6 tbs sugar, separated in two
1 tbs butter
8 oz carton of whipping cream

In a small bowl, mix together cherries and half of extract and sugar. Give the orange a quick squeeze over the top, then let sit for a few minutes. Heat up a skillet to medium. Melt butter, then place cherries face down. Let sizzle until caramelized, then remove immediately. In another bowl, whip together remaining ingredients, including all juice left in orange. The cream is done when it forms a stiff peak. Serve on top of warm cherries!

Note for making great cherries and cream: Pretty nifty, eh? I’m not one for decadent desserts, but this was tasty. So easy too! I will say that the more sugar the better with the cherries… once they warm they start to get a little sour. I think the orange whipped cream could go on anything and make it delicious (and I’m not a huge fan of citrus, so that’s saying A LOT). Not bad for a shot in the dark!
