MONTH 3, RECIPE 12: AVOCADO SCRAMBLE
Sometimes I think it’s great to wake up and make a huge breakfast. Coffee, eggs, toast, home fries.. the works. As you can probably guess, I don’t really have a life.. but whatever. I enjoy a nice spread first thing in the morning. This scramble is modeled after “The Guy”, a dish they have at The Friendly Toast in Portsmouth, New Hampshire, but I added a few of my own twists…

2 eggs or 1/2 block of tofu
1/4 c. veggie sausage (or regular sausage), cut into small pieces
1/3 c. black beans
1/2 c. roasted sweet potato home fries
1/4 c. frozen spinach
1/4 of an avocado, cut into chunks
1 tbs chopped cilantro
Handful sharp cheddar cheese
3 tbs vegetable oil
Salt and pepper to taste

Heat a skillet to medium. Add oil, then scramble tofu or eggs until cooked (you’ll want to make the tofu crispy and brown if you choose to use it). Add in spinach, sausage, potatoes and cook until warmed through. In the last few minutes of cooking, fold in beans, cilantro and cheese. Top with avocado, salt and pepper and serve immediately.

Note for making superb scrambles: The best thing about a scramble is that you’re just throwing a bunch of stuff in a pan! That and you can put anything you want in them. My avocado is looking a little sad so I’d suggest putting a little lemon or lime juice on it after you cut it… I might make this tomorrow (sans sweet potato) and throw it in a tortilla and make it a breakfast burrito. I’ll let you know how that goes…
